Ingredients
  

  • 1 French baguette sliced into 1/2-inch pieces
  • 2 ripe peaches diced
  • 4 ounces goat cheese softened
  • 2 tablespoons honey
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon balsamic glaze optional
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

  1. Preheat your oven to 400°F.
  2. Arrange the baguette slices on a baking sheet and drizzle lightly with olive oil.
  3. Toast in the oven for about 5-7 minutes, or until golden and crispy.
  4. In a mixing bowl, combine the diced peaches, chopped basil, salt, and pepper.
  5. Gently fold in the softened goat cheese until just combined.
  6. Once the baguette slices are toasted, remove them from the oven and let them cool slightly.
  7. Spoon the peach and goat cheese mixture onto each slice.
  8. Drizzle honey over the top of each bruschetta.
  9. If desired, finish with a drizzle of balsamic glaze for added flavor.
  10. Serve immediately and enjoy!
