Ingredients
  

  • 2 cups ripe peaches diced (about 3 medium peaches)
  • 3 cups seedless watermelon diced (about half a medium watermelon)
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the diced peaches, diced watermelon, and sliced red onion.
  2. Add the chopped mint leaves and crumbled feta cheese to the bowl.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad and gently toss to combine all ingredients.
  5. Serve immediately, or refrigerate for 15-30 minutes to allow the flavors to meld.
