Ingredients
  

  • 1 French baguette sliced into 1/2-inch thick pieces
  • 2 ripe peaches diced
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and brush both sides with olive oil. Bake for about 5-7 minutes, or until golden and crispy.
  3. In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and lemon juice. Use a hand mixer or whisk to whip until smooth and creamy.
  4. In another bowl, mix the diced peaches with a pinch of salt and pepper. Let them sit for a few minutes to enhance their flavor.
  5. Once the baguette slices are toasted, spread a generous layer of the whipped ricotta on each slice.
  6. Top the ricotta with the seasoned peaches and garnish with fresh basil leaves.
