Ingredients

For the Chicken Filling
  • 3 cups Shredded Chicken Use leftover rotisserie chicken or poach chicken breasts for better texture.
  • 1 piece Poblano Pepper Roast before adding for enhanced flavor.
  • 2 cups Salsa Verde/Roja Ensure it's thick to avoid a soupy casserole.
For the Layers
  • 12 pieces Corn Tortillas Fry lightly before layering to prevent sogginess.
  • 1 cup Mexican Crema/Sour Cream Greek yogurt can be an alternative for a lighter option.
  • 2 cups Shredded Cheese (Oaxaca/Mozzarella) Mix different cheeses for variety.
Optional Add-ins
  • 1 cup Beans Black beans or pinto beans work wonderfully.
  • 1 cup Spinach Sauté with the chicken for added flavor.
  • 1 tablespoon Chipotle in Adobo Add for an extra kick.

Equipment

  • 9x13 inch baking dish
  • large skillet
  • aluminum foil

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and have your baking dish ready.
  2. In a large skillet, heat a little oil over medium heat. Fry each corn tortilla for about 30 seconds on each side until warm.
  3. In your prepared baking dish, pour a layer of salsa, then lay the fried corn tortillas to cover the bottom.
  4. Sprinkle half of the shredded chicken over the tortillas, add a drizzle of crema or sour cream, and top with shredded cheese.
  5. Continue layering salsa, tortillas, chicken, crema, and cheese until all ingredients are used, finishing with tortillas, salsa, and cheese.
  6. Cover the baking dish tightly with aluminum foil and bake for 25 minutes.
  7. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  8. Remove from the oven and let rest for 10-15 minutes before serving to allow layers to set.
