- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 5-7 minutes until golden brown and fully cooked. Remove from skillet.
- In the same skillet, reduce heat to medium and add soy sauce, brown sugar, bourbon, garlic, ginger, and crushed red pepper. Stir and bring to a simmer for 3-4 minutes.
- Mix the cornstarch with water to create a slurry. Slowly pour the slurry into the sauce while whisking. Cook for another 2-3 minutes until the sauce thickens.
- Return the chicken to the skillet and coat in the sauce. Cook for an additional 2-3 minutes until heated through.
- Transfer to a serving dish and garnish with chopped green onions. Serve hot over rice or veggies.
