  • 2 tablespoons vegetable oil for searing
  • 2 pounds beef chuck cut into 1-inch cubes

  • 1 tablespoon sesame oil for sautéing
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 medium carrots chopped
  • 1 medium bell pepper chopped
  • 2 cups beef broth homemade or low-sodium
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons brown sugar or coconut sugar
  • 2 tablespoons rice vinegar or white vinegar
  • 1 teaspoon five-spice powder optional
  • 1 piece star anise optional
  • 1 cup green onions chopped, for garnish
  • 4 cups cooked rice for serving

Method
 

Step-by-Step Instructions
  1. Heat the vegetable oil in a large pot over medium-high heat. Season the beef with salt and pepper and brown in batches for 5–7 minutes. Remove and set aside.
  2. Reduce the heat to medium, add the sesame oil, onion, garlic, and ginger. Sauté for 3–4 minutes until translucent and fragrant.
  3. Add the carrots and bell pepper, cook for an additional 2–3 minutes until slightly softened.
  4. Deglaze the pot with a splash of beef broth, scraping up the browned bits.
  5. Return the beef to the pot, add remaining beef broth, soy sauce, brown sugar, rice vinegar, five-spice powder, and star anise. Mix well.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour and 15 minutes, stirring occasionally.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve over rice, garnished with green onions.
