Cooking Instructions
  1. In a mixing bowl, combine lemongrass, garlic, shallots, fish sauce, soy sauce, and sugar. Stir until sugar dissolves.
  2. Coat chicken thighs evenly with marinade, cover, and marinate in the refrigerator for at least 15 minutes.
  3. Preheat grill to medium heat (350°F / 175°C), ensuring grates are clean and lightly oiled.
  4. Place chicken skin-side down on the grill and sear for 5-7 minutes until golden brown.
  5. Flip chicken, reduce heat if necessary, and cook an additional 7-10 minutes until internal temperature reaches 165°F (75°C).
  6. Remove chicken from grill, let rest for 5 minutes, then slice and serve.
