  • 1/2 cup Onion finely chopped, yellow or white
  • 1/4 cup Fresh Parsley chopped, can substitute dried
  • 1 tbsp Fresh Thyme chopped, can replace with dried
  • 2 tbsp Worcestershire Sauce can substitute with soy sauce
  • 1 large Egg beaten, or use flax egg for vegan
  • to taste Salt
  • to taste Pepper
For the Topping
  • 1/2 cup Ketchup can substitute with BBQ sauce

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line your sheet pan with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, garlic, onion, parsley, thyme, and Worcestershire sauce. Add the beaten egg, salt, and pepper. Mix gently.
  3. Shape the mixture into mini patties (2 inches wide and 1 inch tall) and place them on the prepared sheet pan.
  4. Bake the meatloaf minis for 20-25 minutes until they reach an internal temperature of 160°F (71°C).
  5. Spread ketchup on each mini and return to the oven for 5 minutes until bubbly.
  6. Allow the minis to rest for a few moments before serving warm.
