Preheat your oven to 350°F.
In a large mixing bowl, combine the sour cream, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
Place the chicken breasts in a greased 9x13-inch baking dish. Pour the sour cream mixture over the chicken, ensuring each piece is well coated.
Sprinkle the shredded cheddar cheese evenly over the top of the chicken.
If using breadcrumbs, mix them with olive oil in a small bowl until they are evenly coated. Sprinkle the breadcrumb mixture over the cheese.
Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Let the dish rest for 5 minutes before serving.
