Method
 

Directions
  1. Preheat your oven to 350°F (175°C). Soak the dried cherries in port wine for about 10 minutes.
  2. Mix coarsely ground pepper, brown sugar, garlic powder, paprika, ground coffee, kosher salt, ground cinnamon, ground cumin, and ground mustard in a shallow dish.
  3. Coat each steak in the spice mixture and refrigerate for about 30 minutes.
  4. Heat canola oil in a skillet over medium-high heat and sear the steaks for about 2 minutes on each side.
  5. Transfer the skillet to the preheated oven and bake the steaks for approximately 15 minutes until medium-rare.
  6. Melt butter in a saucepan and sauté shallots until soft. Add beef broth and thyme, boiling for 5-6 minutes.
  7. Stir in heavy whipping cream and cook for an additional 3-5 minutes. Add soaked cherries and port wine to finish the sauce.
  8. Let the cooked steaks rest for a few minutes, then plate and spoon over cherry sauce. Optionally sprinkle with blue cheese.
