Method
 

Cooking Instructions
  1. Cook rice according to package instructions, around 15-20 minutes. Set aside when done.
  2. Heat olive oil in a large skillet over medium heat. Season chicken and sear for 6-7 minutes on each side until cooked.
  3. In the same skillet, sauté onion for 3-4 minutes until soft, then add garlic and ginger for about 1 minute.
  4. Stir in ground spices and cook for another 1-2 minutes.
  5. Add coconut milk and chicken broth, stir, and let simmer for 2 minutes.
  6. Nestle chicken into the sauce and simmer for 5 minutes.
  7. Remove from heat, stir in basil and lime juice, adjusting seasoning to taste.
  8. Serve chicken over rice, garnished with fresh basil.
