- Heat a wok or large skillet over high heat for 2-3 minutes until it’s very hot.
- Whisk together soy sauce, honey, vinegar, cornstarch, chili, and water in a small bowl until smooth.
- Add oil to the hot pan, then sear the sliced beef for 2-3 minutes until browned.
- Toss minced garlic and ginger in the same pan and stir for about 30 seconds.
- Add bell peppers, snap peas, and carrots and stir-fry for 2-3 minutes until crisp-tender.
- Return the beef to the pan along with the prepared sauce and stir continuously until thickened.
- Drizzle sesame oil, toss everything together, top with spring onions, and serve immediately.
