Method
 

Preparation
  1. In a mixing bowl, combine the sweet chili sauce, soy sauce, minced garlic, grated ginger, and fresh lime juice. Add the chicken thighs and let marinate for at least 30 minutes.
  2. While the chicken marinates, whisk together coconut milk, lime juice, sweet chili sauce, and salt in a separate bowl. Cover and chill.
  3. Heat a grill pan over medium-high heat. Cook the marinated chicken for 5-6 minutes on each side or until cooked through. Let it rest, then slice into strips.
  4. Layer jasmine rice in serving bowls, add chicken on top, and drizzle with the coconut lime sauce.
  5. Sprinkle fresh herbs and crushed red pepper before serving.
